Whenever my parents had a meal that was a "almost" of an expensive or hard to find ingredient dinner such as steak, My Dad said, "this is Poor Man's Filet Mignon" etc.
This is my first posting of a Poor Man's Dinner, Chicken Parmigiana.
I purchase the large "club size" package of frozen chicken breasts to keep on hand. They are individually frozen and you get about 5 pounds for about $10.00.
Earlier today, I pulled out 2 rather large pieces and 1 small-esh of chicken from the freezer bag ( stash). I placed these on a paper towel covered large dish. I left them out for about 20 minutes until they just started thawing. Once the tops of the chicken breasts were showing signs of moisture, I sprinkled them with a combination of Season Salt and "Braggs All Purpose Seasoning." Then the plate of chicken went into the fridge to finish thawing.

To make the entire dinner you will need the following:
- The plate of prepared raw chicken breasts
- 6 tablespoons from a jar of your favorite pasta sauce. I used a Cheese and Spinach pasta sauce. The remaining sauce I intend to use this weekend to make Calzones
- 2 heaping tablespoons of Margarine
- Simple grated parmesan cheese or shreds if your budget allows
- A 3X3 inch piece of Mozzarella cheese that you have sliced into little sticks ( see pictures)
In a large skillet with lid, on medium high heat, melt the margarine and then place the chicken breasts in the skillet. Brown the chicken on both sides, reduce the heat for simmering, and push all the chicken into the center of the pan with edges touching. Spoon and spread the pasta sauce on the chicken, generously sprinkle some parmesan cheese on top. Place a lid on the chicken for about 20 minutes or until the chicken is completely cooked and all the juices are running clear.
Now, prepare your sides.
I chose "Rice A Roni - Rice Pilaf" ( Hubby's favorite) and some steamed broccoli ( frozen in steamable bag)
Since this takes about 25 minutes, all will be done at the same time.
During the last 5- 10 minutes before serving, separate the chicken that has been cooking together, and place the Mozzarella cheese sticks on top to melt.
