Easy Peasy Pineapple Angel Food Cake!

I thought it might be too humid today for a super easy peasy Pineapple Angel Food Cake, but it came out fine. The middle fell a bit but that is only because Hubby went to check on it for me and I forgot to tell him to be careful shutting the oven door!

To make one:
1 box white angel food cake mix (I prefer Betty Crocker)
1 large can (20 oz.) crushed pineapple in juice, undrained

In large bowl, beat dry angel food cake mix and crushed pineapple on low speed 30 seconds; scraping the sides at least once, then beat on medium speed 1 minute. Do not over beat or you will lose the "fluff". I like to put the pineapple with the juice in the bowl first, then the dry mix on top before mixing.

Pour into a (9X9X3, tube pan or 9X15) baking pan very lightly sprayed with cooking oil. Normally you make an angel food without greasing the pan, but with the addition of the pineapple it makes it easier to cut the pieces.

Bake 40 to 45 minutes or until deep golden brown. Cool completely so the cake does not flatten when you cut it and use serrated knife to cut. Top with whipped cream if you would like.
Keep tightly wrapped with foil.
